Just three years after I was diagnosed with Celiac Disease in May of 2011, I whipped up a variety of baked goods and set up my first booth as Gluten-Freedom Bakery at Goliad Market Days in May of 2014. I set out to create wonderfully tasting gluten free treats for every home. From pie crusts and cakes to bread and tortillas, not even the pickiest eater would ever know the difference. After three years of operating under the Texas Cottage Law and baking out of my home I was able to expand to my first commercial kitchen located inside the Victoria Regional Airport.
You can now find my products throughout Victoria, Cuero and Yoakum locations including: The Box Coffee Bar, Java Bean inside Detar, Kahve Coffee & Eats (inside the mall), Karen's Sweetpea Cupcakery, and Main Street Kaffee Haus & Deli in Cuero. On select Saturdays I set up a booth at the Victoria Farmers’ Market as well.
When opening Gluten-Freedom Bakery, my only focus was gluten free foods. After having to limit my dairy intake, as well as having a family member with a soy allergy, I started to offer more than just gluten free. Now I try my best to accommodate any special dietary need including dairy free, soy free, egg free, corn free, and vegan. I promise to ALWAYS provide quality products to my customers.
